Courgette, Feta and Mint Frittata

 1 tbsp cooking olive oil
 4 eggs
 1 small red onion - chopped
 2 courgettes - grated
 1 wheel feta - crumbled
 1 handful fresh mint
 1 red birds eye chilli (optional)

Wisk the eggs together in a bowl with salt and pepper and set aside


Heat oil in a frying pan on a moderate heat and cook the courgette, chilli and onion until soft


Add the beaten egg mixture to the pan and swirl around to fill the whole pan and cook on a medium heat until the bottom starts to set


Add the crumbled feta on top and finish off under the grill for a minute or two until the egg has set on top


Remove from grill and scatter with fresh mint
