Chicken Pad Ka Prao

 1 tbsp cooking oil
 1 white onion - sliced
 200 g chicken breast - sliced in strips
 1 carrot - sliced
 2 red chilli's - finely chopped
 3 cloves garlic - minced
 1 cup Thai basil (or substitute with ordinary basil)
 1 tbsp Thai fish sauce
 1 tbsp soya sauce
 1 tsp palm sugar
 2 spring onions - sliced
 2 tbsp fresh coriander - chopped

Heat the oil in a wok until warm add the onions and stir

Add the chicken and carrots and continue to cook until the chicken starts to brown and the carrots start to soften

Add in the garlic and chilli and stir through

Add the fish sauce and soya and stir through

When the chicken and carrots are cooked turn off the heat and add the basil then give it a good stir. (Add another tablespoon of soya sauce and fish sauce if you want it saucier).

Serve with rice and top the Pad Ka Prao with sliced spring onions and some fresh coriander.
